Italian Cauliflower Bake
This delicious casserole has all the yummy Italian flavors of lasagna, but with healthy cauliflower and protein packed turkey!
1 tsp olive oil
1/2 cup chopped onion
1 cup sliced mushrooms
2 garlic cloves, minced
1 pound lean ground turkey
1 Tbsp Italian seasoning
1 tsp sea salt
1/4 tsp crushed red pepper
1/4 tsp freshly ground black pepper
2 cups marinara sauce
1 (15-ounce) can diced or stewed tomatoes
4 cups (about 3 pounds) pounds cauliflower, cut into florets
1/2 cup low-fat mozzarella
1 tablespoon grated parmesan
Fresh basil sprigs (optional)
Preheat oven to 350 degrees F. Prepare a 9 x 13-inch baking dish with cooking spray.
Heat oil in a large skillet placed on medium heat. Add onion and mushrooms; sauté 4 minutes. Add garlic and cook for 30 seconds, stirring constantly. Stir in turkey. Sprinkle with seasoning, salt and peppers, and sauté 3 minutes or until browned. Stir in sauce and tomatoes.
Place cauliflower in a microwave-safe bowl. Cover and microwave for 5 minutes or until tender. Drain any excess fluid.
Place cauliflower in baking dish and top with the tomato sauce mixture. Bake in 350 degree oven for 20-30 minutes or until hot and bubbly. Add mozzarella cheese and bake another 5 minutes or until cheese is melted. Let stand 5 minutes before serving. Garnish with parmesan and fresh basil.
