Quinoa Salad


1 ½ Cup Quinoa, Uncooked
3 Cups Water
1 Garlic Clove, Peeled and Grated
½ Cup Extra-Virgin Olive Oil
¼ Cup Freshly Squeezed Lime Juice
1 ½ TSP Salt
1 Sweet Potato, Cooked and Diced
1 Cup Broccoli, Chopped
1 Cup Cherry Tomatoes, Halved
½ Cup Chopped Cilantro


  1. Bring quinoa and water to a boil in a medium saucepan, cover and reduce heat to a simmer. Cook for 10-15 minutes or until water is absorbed.
  2. Meanwhile, whisk garlic, oil, lime and salt in a large bowl.
  3. After quinoa is cooked, add sweet potato, broccoli, tomatoes, cilantro and dressing. Mix until well combined. Serve warm or refrigerate up to three days.
