One-Pan Oven Roasted Shrimp & Veggies
2 cups sliced zucchini
1 cup fresh snow peas
1 cup roughly chopped red onion
1/4 tsp. garlic powder
1/4 tsp. onion powder
1/4 tsp. chilli powder
1 tbsp. lemon juice
2 tsp. olive oil
1/8 tsp. each salt and black pepper
8 oz. (about 16) raw large shrimp, peeled, tails removed, deveined
1/4 cup crumbled reduced-fat feta cheese
Preheat oven to 400 degrees. Spray a baking sheet with nonstick spray.
Lay veggies on the baking sheet. Sprinkle with garlic, onion, and chilli powder. Bake for 12 minutes.
Meanwhile, whisk lemon juice, oil, salt, and pepper in a medium sized bowl. Add shrimp and toss to coat.
Take the veggies out of the oven and flip. Evenly place the shrimp around the veggies, and pour any excess liquid from the bowl onto the tray. Place back in the oven and bake for another 12 to 15 minutes, until veggies are soft and shrimp is cooked through.
Sprinkle with feta and enjoy!
